Born and raised in the heart of London from five generations of Covent Garden Market traders (once the thumping heart of Her Majesty’s fruit and vegetable trade), Grant Hailey has spent most of his life working and living in the family’s high-end green grocery. With this in his blood, it’s hardly surprising that his inspiration remains positively organic: use only the freshest ingredients or nothing at all.
